Baking Trials: All Veggie Lasagna!
Saturday, October 24th, 2009Last year, I had spaghetti squash for the first time. I had it at a restaurant and LOVED it! I literally thought that it was mashed up squash made into noodles. I didn’t realize it until I went to work and was asking all of my co-workers where to find it that it was actually a squash. Yes, sometimes I am not very smart. (And only lately have I became interested in all of the “domestic” stuff like cooking, sewing and crafting). I found a recipe online for lasagna made from spaghetti squash and zucchini and I just had to try it. It was not only looked and sounded good, but it created vegetables in a whole new way.
Here is the final result:
I loved it! It was perfect for me; however, the hubby thought that the spaghetti squash just tasted like not cooked enough pasta. (I think the next time I make the spaghetti squash, I will have to bake it a little longer)
